According to official sources, five years ago Spain counted with more than 500.000 iberico race pigs dedicated to produce the delicious jamon ib\u00e9rico, while in 2012 only 145.000 iberico porks, less than one-third. The negative trend has continued until today and the Spanish Government decided to take the action.<\/p>\n<p style=\"text-align: justify;\">Miguel Angel Arias Ca\u00f1ete &#8211; Spanish Minister of Agriculture &#8211; explained that the definitions of Iberico Ham have now been cut down to only three categories, helping consumers to make a conscious decision with regards to the product they are to acquire, while guaranteeing a transparent product traceability.<\/p>\n<p style=\"text-align: justify;\">The main difference in the classification lays in the % of ib\u00e9rico pig.<\/p>\n<ul style=\"text-align: justify;\">\n<li><strong>Ib\u00e9rico de Bellota or 100% Ib\u00e9rico<\/strong><\/li>\n<\/ul>\n<p style=\"padding-left: 30px; text-align: justify;\"><em>This is the highest quality of iberico ham, made from 100% \u2018ib\u00e9rico\u2019 race pigs, conveniently fatted with acorn and grown-up in a controlled-freedom environment. When the pork is not 100% ib\u00e9rico, the % of Ib\u00e9rico\u00a0needs to be stated in he label.<\/em><\/p>\n<ul style=\"text-align: justify;\">\n<li><strong>Ib\u00e9rico de Cebo de Campo<\/strong><\/li>\n<\/ul>\n<p style=\"padding-left: 30px; text-align: justify;\"><em>It is the jam\u00f3n ib\u00e9rico coming from Ib\u00e9rico pigs crossed with other races.\u00a0 The percentage of Ib\u00e9rico race of the animal needs to be stated in the new labels. The pig has been fatted with animal feed, have 100 meters of space per animal and lives in a controlled-free environment during the last period of their lives to improve the quality and taste of the meat.<\/em><\/p>\n<ul style=\"text-align: justify;\">\n<li><strong>Ib\u00e9rico de Cebo<\/strong><\/li>\n<\/ul>\n<p style=\"padding-left: 30px; text-align: justify;\"><em>\u00a0The race has to be a<em>t least 50%<\/em>\u00a0Iberico. It is grown in captivity and in compliance with all sanitary controls.<\/em><\/p>\n<p style=\"text-align: justify;\">Currently 80% of the Jam\u00f3n Iberico commercialized is Ib\u00e9rico de Cebo, and the new regulation helps to protect the quality and identity of the Jamon 100% Ib\u00e9rico.<\/p>\n<p style=\"text-align: justify;\">At MX2 GLOBAL, we are very happy with the new regulation.
